Corn - Rio Grande Blue
Zea mays
This Rio Grande Blue Corn can be traced back to the Pueblo Native Americans in New Mexico. Adapted to a long season and low humidity environment, this variety can be ground into a wonderful all-purpose flour or hang the 8-10” ears to dry for a beautiful display. Ears can have up to 18 rows of kernels. Blue corn, on average, has a 20% higher protein content, more antioxidants, and a lower glycemic index than standard corn.
*If left in the field in humid or rainy weather mold problems may appear in the ear.
